Make a foundation chain. To make the waffle stitch, you need to work in multiples of 3 minus 1. This example is worked with a foundation chain of 20 stitches.

Chain 1 as a turning chain.

Work a double crochet from the second chain stitch from your hook.

Work 1 double crochet into every chain stitch to end of row.

Chain 1 as your turning chain and turn your work.

Start working on the next row. Work 1 double crochet into the next 2 stitches as normal.

Work 1 double crochet into the next stitch, but insert your hook behind the stitch below, rather than the top of the stitch.

Repeat steps 7-8 to end of row,

Chain 1 as your turning chain and turn your work.

Work 1 double crochet into the next 2 stitches, but insert your hook behind the stitches below, rather than the top of the stitches.

Work 1 double crochet into the next stitch as normal.

Repeat steps 11-12 to end of row.

Continue working in this pattern. Alternating rows between 2 double crochets behind and 1 double crochet at the top of the stitch, and then 1 double crochet behind and 2 double crochets at the top of the stitch. Between each row make sure to include 1 turning chain before continuing onto the row.
